Veggie & Ham Omelette Cups


Welcome to the easiest meal prep idea for brekkie or snacks. These are the perfect snacks you can grab from the fridge when you're on the go or in need of a little something. Simply sub out the ham if you would prefer these to be vegetarian. And if you have little ones then they also love these just as much. 

We highly recommend you use silicone patty pans instead of paper patty pans because they are less likely to stick as much. 


Time:
Approx 30 mins
Serves: 15-20 cups


Ingredients:

6 x eggs
½ x red onion, diced
1 x brown onion, diced
7 x mushrooms, diced
2 x spring onions, diced
1 x capsicum, diced
100g spinach, sliced
300g x can of corn (or fresh corn)
100g ham
Olive Oil spray / butter
Salt & pepper


Method:

Step 1: Turn on your oven, set to fan force and 180 degrees

Step 2: Chop the vegetables as specified in the ingredients list

Step 3: In a bowl, whisk the eggs together and add the salt & pepper

Step 4: Spray your patty pans with olive oil. This step is done to avoid the omelette sticking once cooked. If you don’t want to use olive oil spray then line the patty pans with some butter or margarine
*If you have silicone patty pans then bonus points to you*

Step 5: Mix your vegetables and eggs together then evenly spoon your mixture into your patty pans

Step 6: Bake in the oven for 15-20 mins. Remove from the oven once the top is browned lightly and no longer runny

Step 7: Allow to cool down.  Store in an airtight container.  

 Reheat via the oven or microwave whenever you please! Or if you love your omelette cups cold then you won’t need to re-heat!
