Soooo we may or may not have eaten a kilo of turkey and many other delights over the Christmas break. And now that the New Year is here, it’s time to start the year with a bang and get back into our healthy eating ways. We can only assume there are a few of you nodding yours heads alongside us so we are bringing to you one of our FAVOURITE breakfasts to make which is a delicious frittata.
There’s nothing better than starting your day in a positive and healthy way especially when it’s a breakfast that’s so easy to prep. Frittata’s are super flexible because you can throw any vegetable that you please into it, and it takes less than half an hour in total to prep and cook. It’s a win win in our eyes!!
Time: Approx 30 mins
6 x eggs
1/2 x red onion, sliced
1 x zucchini, diced
1/2 x punnet of cherry tomatoes, halved
1 x capsicum, diced
½ x sweet potato, diced
Olive Oil spray
Salt & pepper
Step 1: Turn on your oven, set to fan force and 180 degrees
Step 2: Chop the vegetables as specified in the ingredients list
*Ensure your sweet potato is diced on the smaller side otherwise it won’t cook in the nominated time*
Step 3: In a bowl, beat the eggs and salt & pepper together
Step 4: Line your baking dish with baking paper then lightly spray the baking paper with olive oil spray. This step is done to avoid the frittata sticking once cooked.
*If you don’t want to use olive oil spray then line the baking paper with some olive oil, butter or margarine*
**We use a 25cm x 20cm baking dish**
Step 5: Scatter your vegetables into the baking dish and distribute them evenly then pour your egg mixture over the top
Step 6: Bake in the oven for 15-20 mins. Remove from the oven once the top is browned lightly and no longer runny
Step 7: Allow to cool down before cutting into slices. Store in an airtight container or wrap individually in foil
Reheat via the oven or microwave whenever you please! Or if you love your frittata’s cold then you won’t need to re-heat!
