Satay Chicken


Oooo how we love ourselves some Satay Chicken. We're all about those healthier alternatives for our kitchen dinner favourites so it only made sense to give Satay Chicken a revamp. We're not going to waffle on too much more, because let's face it, you're not here for this paragraph so scroll on down......

 

Prep Time: 10 mins
Cook Time: 30 mins
Serves: 2 with lunch leftovers

 
Ingredients:

500g chicken, cubed
2 cups of cooked brown rice
1 x brown onion, diced
1 x broccoli, cut into bite size pieces
6 x tbsp of crunchy peanut butter
1 x tsp soy sauce
2 x tbsp of garlic, finely diced
sprinkle of chili flakes
squeeze of lime juice
¾ cup of water
dash of oil
salt & pepper


Method:

Step 1: Cook your brown rice in your rice cooker or as per instructions on the packet

Step 2: Cut your chicken into bite size cubes, add a dash of oil to your pan then cook on medium heat until slightly browned Note: The chicken will cook further in Step 6.

Step 3: Whilst your chicken is cooking, chop your onion and broccoli as specified in the ingredients list

Step 4: Once your chicken is slightly browned, remove from the pan and put into a bowl. Then start cooking your onion and garlic until lightly browned

Step 5: Add the peanut butter, soy sauce, squeeze of lime juice, chilli flakes, salt and pepper and ½ cup of the water to the pan with the onion and broccoli in it. Stir everything together and bring to boil, then reduce the heat and let it simmer.

Step 6: Add your chicken back into the pan so it can continue to cook through and leave simmering for 5-10 minutes. Ensure you stir through every couple of minutes.

Step 7: Whilst your chicken and sauce is simmering away, boil a pot of water and cook your broccoli in the water for 3-4 minutes until the broccoli reaches your ideal crunch

Step 8: Check the consistency of your satay sauce. If it’s a bit thick add the remaining water plus some if required. When you’re happy with your sauce consistency, add the broccoli and stir through

Step 9: To serve, put a scoop of brown rice in your bowl, then add a couple of scoops of your satay chicken on top
